Essential nutrient measured as total choline: the free base plus its esters and phospholipid-bound forms (phosphatidylcholine, sphingomyelin, glycerophosphocholine). Substrate for acetylcholine synthesis and for phosphatidylcholine in cell membranes, and a methyl donor via betaine. Food panels report the total; supplement products name a specific salt such as choline bitartrate.
